My journey with sourdough is very new and there is still so much to learn. But it’s a fun adventure and one that is continuing to bless my family. After I made my starter, I became stuck and overwhelmed because I had no idea what to do with this ingredient. Now, it’s a staple in my kitchen, one that provides a base to my meals.
Follow with me in my kitchen this week as I use my sourdough starter.

MONDAY
My starter has not been fed but it is full of what is known as discard. The yeast activity has settled down and a liquid layer has formed on the top. Instead of throwing it away, I get an idea to try my own version of Cinnamon Toast Crunch for breakfast.
After breakfast, I’ll feed my starter with flour and water.

TUESDAY
I didn’t use my starter when it was active and it became discard. But I’m not discarding it, I’m going to use it for Taco Tuesday. I will make tortillas in a cast iron skillet and serve them with chicken for tacos.
WEDNESDAY
Using the discard yet again, I’ll make pasta. Once I get more confident in my homemade pasta skills, I’ll try making homemade ramen. Eesh, that’s scary to think about now, but I am up for a challenge.
Once the dough for pasta is made, I’ll feed my starter with flour and water and let it go to work.
THURSDAY
Now, it’s finally time I use the active starter. In the summer, it’s a good time to make hot dog rolls or hamburger buns. But since it’s winter, I’ll make dinner rolls.
Also, in the winter, sourdough starter takes longer to become active because the house is a lot cooler. So I can feed it in the morning and it will be active the next morning.

FRIDAY
PIZZA! PIZZA! PIZZA! I use the active starter in the morning to make pizza dough. Then, I’ll bake it at dinner time. Serve it with a salad or fries.

SATURDAY
“In the morning, I’m making waffles.”
I’m using the discard to make waffles and cook them in my waffle maker. I didn’t splurge, I just got a basic cheap that will do the job until I am able to get a heavy duty waffle maker.
I’ll feed the starter so it will be active in the evening. That is when I’ll make the dough for bagels.
SUNDAY
I make the bagels for breakfasts and use the active starter to make my homemade crescent rolls for dinner. I feed my starter again, and it’s ready for whatever I want to make on Monday.
