EASY DINNER IDEAS FOR COOLER DAYS

There is something magical about having the oven heat the house with dinner cooking. Stirring a delicious one pot meal in a Dutch Oven warms me up faster than adjusting the thermostat. As much as I love cooking dinner in the cooler months, it is tricky to get nutritious produce when produce is not in season. This dilemma can be solved easily, with canned vegetables from your own garden and frozen vegetables. Enjoy the taste of the garden with these easy dinner ideas for cooler days.

SHEET PAN DINNERS

These are easy dinners to sneak a vegetable. Some ideas are good for themed dinner nights, like Taco Tuesday. See Meal Themes post for more inspiration on meal planning.

  • Shrimp, Broccoli, and Potatoes (pictured above)
  • Italian Chicken, Green Beans, and Potatoes
  • Sheet Pan Nachos (use canned corn from the garden or from the store)

CAST IRON SKILLET DINNERS

These recipes don’t include any frozen vegetables. Fix that by boiling canned vegetables and serve them as a side dish.

This winter, I want to eat more vegetables without paying for produce at the grocery store. Who is with me? A salad bag mix will be the only produce I let in my cart. Otherwise, I plan to stick to canned vegetables and the BIGGEST money saver of all… frozen vegetables.
