ONE DAY USING ONLY CAST IRON

Ever get overwhelmed with all of the options for cookware? Yes! I am a very simple person. So the less I have to use and clean, the better. I’ll show you how to make all of your meals for the day using cast iron!

It doesn’t matter which cast iron pan you use. For this guide, I used the Lodge Cast Iron Combo Cooker.

So really, it’s two skillets in one. The lid can serve as a separate skillet.

BREAKFAST

I’m going as easy as you can get for breakfast. Eggs! I told you, I’m simple.

First, I use the lid to cook the eggs by putting on some coconut oil and heating the pan over medium heat.

So easy. I ate this with a bowl of yogurt and raspberries.

LUNCH

Hot Dogs and Rice. Thank you Joanna Gaines for this cheap, easy, and delicious idea.

Now, we will use both parts of the skillet combo.

Put olive oil in the lid of the combo cooker. Cut up some hot dogs and cook in the oil. Add in some crushed red pepper too.

I put two cups of homemade chicken stock in the deep skillet and boil it. Once it’s boiling, I add a cup of jasmine rice. I love the taste. And it is also rich in fiber, helping with digestive health. Also, jasmine rice has iron. Cover and cook until the liquid is absorbed.

Add the hot dogs in with the rice.

Serve with green onions.

To clean both skillets, I scrubbed both with a stainless steel scrubber and dried immediately.

DINNER

This meal will always hold a special place in my heart. It was what I made for the dinner the night I went into labor with my second daughter. Margherita Pizza.

First I spread out a pizza crust I unwrapped from a can I bought in the refrigerated section of the grocery store. I rubbed on olive oil.

Second, I cut up a Roma tomato and added it on the crust. I coated the tomatoes with minced garlic. Top with mozzarella cheese. Cook in a 450 degree Fahrenheit oven for 20 minutes.

COST FOR THE DAY

This is to show you an approximate cost of these meals for the day.

The cost for two eggs is around seventy five cents. That’s breakfast without the yogurt and raspberries.

For lunch, a pack of hot dogs is around $9. One cup of rice is $1.

Dinner: The crust is approximately $4, half a bag of cheese is $1 and one tomato is around $1.75.

For the whole day, that is around $17.50. Less than $20 for the day! Yes Please.

Cooking with cast iron is not as intimidating as it seems. It is so versatile, easy to clean and cost effective. I can’t spend $20 out to eat for one meal, let alone a whole day.
